The Easiest and Cleanest Way to Brine Turkey
We have TWO tried-and-true methods for brining a turkey that won’t leave your kitchen in a gigantic mess.
The first is to use a 5-gallon cooler with a spigot for draining the turkey brine afterwards. Any of these coolers on Amazon would do the trick!
This other method looks a little rough, but it gets the job done. Line a 5-gallon paint bucket (buy a clean one, obviously) with a tall kitchen trash bag (unscented!). Once it’s filled with the cold water brine solution and the turkey, twist the top of the bag to seal it. The main appeal here is that there is zero clean up. Once you remove the turkey out of the bag to pat dry and cook, you can just toss the trash bag!
Note: this method ONLY works if you live in a cold enough climate and can leave the bucket outside overnight (the temperature needs to stay between 32ºF – 40ºF). Or if you have a gigantic refrigerator.
Our Favorite Roasting Pan
More often than not, I prefer to use a disposable roasting pan like this one. By the end of Thanksgiving meal prep and feasting, I’m in no mood to do dishes!
But sometimes I can’t stand spending the money on a roasting pan I’m just going to throw away (why are disposable roasting pans so expensive??), and so I’ll use this Cuisinart stainless steel roasting pan. I’ll choose a pan that can handle the heavy cycle in my dishwasher ANYDAY over a nonstick alternative that I have to hand wash!

- 1 tablespoon dried oregano

- 4 whole cloves garlic

- 12-pound turkey, thawed
