    Ingredients

    • 1 Tbsp olive oil
    • 6 eggs
    • salt and pepper to taste
    • 1/4 cup shredded cheese
    • 1 Tbsp butter

    Instructions

    1. Heat pan over low-medium heat.
    2. Oil pan generously with the olive oil. Make sure the pan is evenly coated.
    3. Whisk eggs in a medium bowl until well combined, add a pinch of salt and mix again immediately before adding eggs to the prepared pan.
    4. Pour eggs into the pan and gently whisk with fork (see video) until just the edges edges are mostly set. It will resemble scrambled eggs.
    5. Add cheese and another pinch of salt.
    6. Let cheese begin to melt and add butter. If you want a completely solid omelette, cover the pan for a minute to allow the steam to complete the cooking process.
    7. Remove the lid and tap pan handle vigorously (see video) to loosen the omelette from the pan. Slide a rubber spatula around the edges and gently underneath the eggs to make sure the omelette isn't sticking anywhere.
    8. Tri-fold the omelette and slide it off the pan onto the serving plate.
