This huevos rancheros play on egg in a hole recipe highlights fresh flavor and bright hispanic taste and color!

One of my favorite dishes I experienced on my LDS mission was the simple plate of huevos rancheros. I had never had huevos rancheros (as well as many Latin-influenced foods) but I loved it when I first had it. The simplicity of eggs topped with fresh Latin ingredients is a natural combination. The only thing I had really ever had with my eggs before was cheese….also the left over syrup with my pancakes. Yes, I was a food simpleton.

I grew up eating eggs in a hole, and recently saw a recipe for avocado and eggs in a whole. That got the thought train going, and next thing you know, I had huevos rancheros in a hole. I tried it, loved it, and thought I would share! Hope you enjoy this simple breakfast! It is refreshing, healthy, and of course, delicious!

Healthy Huevos Rancheros in a Hole

INGREDIENTS:

  • 1 piece of whole wheat toast
  • 1/2 avocado
  • 1 diced roma tomato
  • 1 egg
  • queso fresco
  • canned green chile
  • canned black beans

INSTRUCTIONS:

  1. Cut a circle out of the center of your toast
  2. Place toast onto buttered griddle over medium heat and line the outer rim of the hole with avocado leaving a smaller circle open for egg
  3. Place egg within avocado that is within the toast
  4. After egg white is cooked and yolk has solidified a little
  5. Flip toast and spread remaining ingredients over toast
  6. Add any desired hot sauce or salsa and enjoy!
