Cafe Rio Copycat Creamy Tomatillo Sauce

Cafe Rio is a family favorite anytime we are visiting out west. Their burritos topped with this tomatillo sauce creates an unforgettable flavor combination that we can’t get enough of. Since discovering this sauce, we have used it to smother everything from tacos, to our BBQ sandwiches, to huevos rancheros. You’d be hard press to find something it didn’t go well with!
 

Copy Cat Cafe Rio Tomatillo Sauce

Ingredients (Total prep time: 10 minutes or less):

  • 1 cup buttermilk
  • 1/3 cup water
  • 1 cup mayo or miracle whip (for sweeter sauce use miracle whip)
  • 2 tsp lime juice
  • 1 tsp minced garlic
  • 1 seeded and diced jalapeno
  • 2 quartered tomatillos
  • 10 stems of fresh cilantro
  • 1 package of hidden valley ranch buttermilk powder

Directions: 

  • Add all ingredients to a blender and blend until smooth, or until desired texture is obtained
  • Add more tomatillos and mayo if wanting thicker and creamier
  • Then smother heavily and devour
