Here’s a confession. Every birthday since I’ve been married, I’ve asked my wife for these pancake sausage creations that are just incredible to me for some reason. We never buy them other then for that occasion. What a glorious occasion it is!!

I’ve been wanting to make this recipe for years and finally had that thought come to fruition. It took some experimentation and fiddling around, but I got to a pretty solid finished product! I might still have my wife buy them for my birthday……BUT…..now I have the ability to frequent these bad boys into my homemade breakfast repertoire. I hope to not do this to my own demise of health, although tempting! I hope you can walk that line with me, enjoy!!

Breakfast Pancake Wrapped Sausage Dippers

prep time: 20 minscook time: 10 minstotal time: 30 mins

ingredients:

  • 8 popsicle sticks or skewers
  • 1 cup favorite pancake mix (dry mix only)
  • 1/3 cup cornmeal
  • 8 breakfast sausage links (I prefer maple for this recipe)
  • 1 egg
  • 1 cup of water
  • splash of vanilla
  • canola oil for the frying

instructions

  1. Soak the popsicle sticks in water for a minute or so and then set aside on paper towel and let dry (this aids in them not burning during frying process)
  2. Cook sausages in skillet over medium heat and rotate regularly until browned and cooked through
  3. Place cooked sausages on plate lined with paper towel and let cool
  4. Mix pancake mix and cornmeal together in bowl and move mixture to sides, leaving depression in middle
  5. Add egg, water, and vanilla into the depression and mix until uniform
  6. Pour canola oil in large pot until at least 1 1/2″ deep and heat over medium-high stovetop until oil reaches a steady 350ºF
  7. Once sausages have cooled, pat with clean paper towel to remove excess grease and insert sticks into middle of sausages
  8. Fill tall glass (I use mason jars) with pancake mix until 3/4 full, and holding stick dip sausage into batter and let excess batter drip off
  9. Place battered sausage gently into heated oil and let sit on each side for 1 minute until golden brown
  10. Remove with tongs, dip in syrup and enjoy!
