Easy Instant Pot Chicken Dinner Recipe

I’m ashamed to admit, but i have not been part of the tex-mex craze that has taken over American until recent. I didn’t even know what it was honestly. I had of course heard of Chipotle but hadn’t ever gone out of my way to have it.

I work at a small University and they recently implemented a tex-mex restaurant and I decided to eat there. It doesn’t get much more simple. Rice, a tortilla, choice of beans, chicken or steak, cheese, and a few different salsas and sauces.

Instant Pot Blackened Chicken Burrito Bowl Ingredients:

  • 2 lbs fresh chicken breast
  • 1 cup chicken broth
  • 3 cups rice
  • 6 cups water
  • 3/4 cup BBQ Sauce
  • 1/4 cup honey
  • 1 Tbsp Siracha
  • 1 tsp onion powder, garlic salt, salt
  • Favorite burrito bowl toppings (I used black beans, avocado, rice, and shredded cheese)

Instant Pot Blackened Chicken Burrito Bowls Instructions:

  1. Add broth  and chicken breast to instant pot, set on manual for 12 minutes, and let natural release for at least 5 minutes before removing
  2. Once removed, shred chicken with two forks or hand mixer
  3. Place shredded chicken into skillet over medium heat and pour BBQ sauce, honey, siracha, and salts over chicken, mix well, and spread chicken out over skillet
  4. Let chicken blacken over heated skillet, turning over every few minutes until blackened evenly

Rice

  1. Clean out instant pot bowl immediately after cooking chicken and place the rice and water into the pot
  2. Set instant pot on manual for at least 12 minutes and let natural release for at least 20 minutes
  3. Remove from pot, put your blackened chicken and other favorite toppings over it, serve and enjoy!

Those wholesome and simple ingredient make a great blend an a complete meal filled with great carbs, proteins, and fats. My family is getting sick of me only wanting these burrito bowls, but the more the merrier for me! I make it out of the instant pot so it is quick and easy AND provides a great meal for the family AND if they don’t want it anymore i have amazing lunches for the week! This his quickly become my favorite meal!
