Ingredients Notes
- Chicken: Use a whole chicken, chicken thighs, or breasts. Bone-in chicken pieces add more flavor to the broth.
- Reames Egg Noodles: These noodles make all the difference! We buy them at Walmart or Publix and they can be found in the frozen section (usually near the frozen pastry dough). A total game-changer, because they taste hearty and homemade without the effort!
- Carrots: Fresh carrots add sweetness and color.
- Celery: Adds a subtle, savory flavor and crunch.
- Onion: Yellow or white onions are ideal. Shallots can be used for a milder flavor.
- Chicken Broth: You can use homemade or store-bought. Most of the time I use Better than Boullion chicken base mixed with water.
- Tumeric: Adds a subtle layer to the flavor profile will also adding anti-inflammatory health benefits.
- Cream: Adding cream isn’t completely necessary, but my family really likes it in the soup. I feel like it makes the whole meal a little more satisfying.
- Salt and Pepper: Adjust to taste. Consider using sea salt or kosher salt for a different flavor profile.
Tips for Success
- Use Quality Ingredients: Opt for fresh, high-quality chicken and vegetables. The better the ingredients, the more flavorful your soup will be.
- Homemade Broth: Whenever possible, make your broth from scratch. It adds a depth of flavor that store-bought versions can’t match. Simmer the chicken with aromatics like garlic, onions, carrots, and celery for a rich, savory base.
- Season Well: Don’t be shy with the salt and pepper. Seasoning in layers, starting with the broth and adjusting as you add the chicken and vegetables, ensures a well-balanced flavor.
- Shred the Chicken Properly: Once the chicken is cooked, shred it into bite-sized pieces. This ensures that every spoonful of soup has the perfect amount of chicken. The cut of the chicken will affect how it shreds– the breast will result in big chunks of meat, and the thigh will shred into thin pieces that will spread more evenly throughout the soup.
- Add Vegetables Strategically: Firm vegetables like carrots should be added early in the cooking process (if you’re adapting for a stovetop version), so that they have enough time to cook all the way through.

This is our favorite recipe for chicken noodle soup. A friend brought it to us during the pandemic, and I've never used another recipe since!
Ingredients
- 2 tbsp oil
- 1 medium onion, diced
- 3-4 carrots, peeled and sliced
- 3-4 ribs celery, sliced
- 4 cups chicken broth
- 2 large frozen chicken breasts
- 1/4 tsp tumeric
- 1/2 tsp salt to taste
- pepper to taste
- 1-1/2 cups frozen REAMES egg noodles
- optional: 1/4 cup heavy cream
Instructions
- Push the Sautee button on the instant pot. Add oil and onion and cook stirring, until the onion is soft. This step will develop the sweetness in the onion before cooking the soup.
- Add the remaining ingredients (all of them! Even the chicken breasts and the noodles). Put on the lid and seal the pressure valve. Set to MANUAL or HIGH PRESSURE for 18 minutes.
- After the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, then twist the valve to release the remaining pressure.
- Remove the chicken from the pot to shred it. Put it back in, and add a drizzle of heavy cream. Stir everything well and serve hot.
