One of our mom’s signature cookies (especially around Christmas time) is peanut butter cookies dipped in chocolate. It’s a family favorite and we gobble them up in no time at all! 
 
If you’re a peanut butter cookie lover like I am, this recipe is a MUST. They’re super soft and chewy, packed with peanut butter flavor, and– OMG– they’re so easy to make… 
 
All you need is three simple ingredients (Yes! JUST three!) and about 10 minutes from start to finish. Cross my heart, that’s all it takes. No mixer, no chill time, and no crazy list of ingredients. Grab your peanut butter, a bowl, and a fork and get to it!
 

 

Ingredients

  • 1 cup peanut butter (creamy or crunchy)
  • 1 cup sugar
  • 1 egg
  • Optional: sugar for coating the dough

Directions

  1. Preheat oven to 375ºF.
  1. Use a fork to mix together the peanut butter and sugar really well.
  1. Mix in the egg.
  1. Scoop 2 tbsp dough and roll into a ball. Coat the dough in sugar if desired.
  1. Place the dough on an ungreased cookie sheet 2 inches apart. Press a fork into the dough in a criss-cross pattern.
  1. Bake for 8 minutes (9 for a crunchy cookie) and immediately transfer to a wire rack for cooling.
  1. Makes approximately 1 dozen.
