Peanut butter blossoms are in my top 3 all-time favorite holiday cookies. Maybe even my top 3 ALL-TIME favorite cookies– alongside my much beloved Monster Cookies and my mom’s chocolate dipped peanut butter cookies (which are basically the same thing as PB blossoms, but whatevs). 
 
When I was a kid, I’d nibble around the outside of the cookie, saving the Hershey Kiss in the middle for the final bite. The grown up version of me now tries to evenly distribute the Hershey Kiss by getting a bite of chocolate in every bite.
 
No matter how you eat these, you’re going to love them.

These cookies are quick and easy to make (requiring only THREE easy ingredients for the cookie dough!). And they are completely gluten free, which means more people can enjoy them.

Gluten Free Peanut Butter Blossoms

ingredients

  • 1 cup peanut butter (creamy or crunchy)
  • 1 cup sugar
  • 1 egg
  • Optional: sugar for coating the dough
  • 12 Hershey Kisses, unwrapped

instructions

  1. Preheat oven to 375ºF.
  1. Use a fork to mix together the peanut butter and sugar really well.
  1. Mix in the egg.
  1. Scoop 2 tbsp dough and roll into a ball. Coat the dough in sugar if desired.
  1. Place the dough on an ungreased cookie sheet 2 inches apart. 
  1. Bake for 8 minutes. Press a Hershey Kiss into each peanut butter cookie. Transfer baking sheet to the refrigerator immediately if you want to help the chocolate keep its shape.
  1. Makes approximately 1 dozen.
