A few years ago, I decided that I was never going to win the meal-planning battle. I was never going to be that mom who planned every meal, made an itemized grocery list, and budgeted every penny.
As a compromise with myself, I came up with a “standard” weekly menu that I could memorize and put on repeat each week with slight variations here and there. And the groceries are essentially the same every week too, so I’ve got that memorized (more or less).
Mondays are Mexican night! When I run out of time to meal prep in the day, we usually end up doing something that’s mom-code for one-word-about-how-lame-this-dinner-is-and-I’ll-shoot, like plain cheese quesadillas or refried bean burritos.
But when I remember in the mornings that we’re going to have to eat dinner that night…. I like to throw some chicken in the crockpot for this SUPER easy and SO GOOD Honey Lime Chicken. We throw it on top of rice and beans or inside a burrito for a fabulous weeknight dinner that the whole family loves.

Honey Lime Crockpot Chicken

INGREDIENTS:
4-5 boneless skinless chicken breasts
1/2 cup honey
1/4 cup chicken broth
juice 2 limes
2 tsp ground garlic
salt and pepper to taste
INSTRUCTIONS:
Add all ingredients to a 4-quart slow cooker and cook on low for 4-6 hours, until chicken shreds with a fork.
Remove chicken to shred, then add back into the cooking liquid for serving. Salt and pepper to taste.
