This soup is my family’s new favorite way to eat lasagna! Why fuss with all those layers when lasagna soup is just as good and so much easier?!
I know it’s summer and we’re supposed to be all about the no-bake treats and the ice cream and the summer salads. But this soup is SO GOOD, and I’ll be darned if I have to wait until September to yell you all about it!
I’ve seen lasagna soup here and there on Pinterest and Instagram forever. But every time I scrolled past a recipe, I would think “why bother? why not just make lasagna? what’s the difference?!”
Well, for those of you who are a bit skeptical (like I was), let me set your mind at ease.
Lasagna Soup IS different than lasagna, and I daresay– it’s even better!
Why? For one, I like the cheese to pasta and sauce ratio much better. Somehow, I feel like I get more cheese in every bite. Even though you’re actually using LESS cheese! Which is something that actually makes this recipe a fan favorite of dieters, FYI.
The other thing that really separates lasagna from it’s soupier cousin is the noodles. Yes, you do use the same noodles. But there are a couple of things I like better about the noodles in the soup: 1) there aren’t any crunchy, burnt pieces. 2) It’s less messy to eat smaller noodle pieces. And 3) you get a better ratio of pasta to sauce in soup form.
It’s all win-win-win in my book.
So even though it’s summer, and I know you’re all dreaming of milkshakes and burgers, promise me you’ll give this soup a try ASAP!!

Easy One Pot Lasagna Soup

INGREDIENTS:
- 1 lb. ground turkey or italian seasoned ground turkey
- 24 ounces tomato sauce (with basil & garlic)
- 8 cups chicken stock
- 14 ounces crushed tomatos
- 2 tbsp tomato paste
- 2 tsp vinegar
- 1 tbsp brown sugar
- 1 tbsp Italian seasoning
- 2 tsp garlic powder (more to taste)
- 2 tsp onion powder (more to taste)
- salt & pepper to taste
- 10 lasagna sheets, broken into bite-sized pieces
- 1/2 cup sour cream or plain Greek yogurt or whole milk
- Ricotta cheese and shredded mozzarella for individual serving
INSTRUCTIONS:
- Brown the ground turkey in a large soup pot.
- Add the tomato sauce, chicken stock, crushed tomatoes, tomato paste, vinegar, brown sugar, Italian seasoning, garlic powder, onion powder, salt, pepper, and lasagna noodles. Bring to a boil then reduce heat and cover and let simmer until noodles are al dente.
- Mix in the sour cream.
- Serve with a spoonful of ricotta cheese and shredded mozzarella cheese.
