I really don’t care for it in any form that is not baked. And it took me YEARS to like it cold (as in, pumpkin pie!). But pumpkin bread (looking at you Starbucks!) has been my dearly beloved go-to Fall recipe of choice forever.

INGREDIENTS

  • 2 eggs
  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 1-1/2 cup pumpkin puree (NOT pumpkin pie filling)
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 tbsp molasses
  • 1 tbsp vanilla
  • 1-3/4 cups all purpose flour
  • 1 tsp pumpkin pie spice
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup miniature chocolate chips

INSTRUCTIONS

  1. Preheat the oven to 350ºF. Line and spray a 9×5 loaf pan. Whisk together the eggs, sugar, brown sugar, pumpkin puree, milk, molasses, and vanilla.
  2. Add the flour, pumpkin pie spice, baking soda, and salt. Gently stir to form a batter.
  3. Fold in the chocolate chips. Pour the batter in the prepared loaf pan.
  4. Bake for 55-65 minutes, until toothpick inserted comes out clean.
