So, tell me. Are you making New Year’s resolutions?? 
 
I always make one and only one New Year’s resolution every year. Mostly because I’m setting new goals constantly, so the idea of annual resolutions seems a little redundant to me. And daunting! Having a list of goals that require an entire year to maintain always seems a little overwhelming to me. Which is why I got in the habit of picking one, bite-sized, manageable goal each year.
 
I think the craziest resolution I ever set for myself was in 2015 when I was pregnant with my youngest. I resolved not to eat any french fries all year (the underlying goal was to reduce my sodium intake during my pregnancy, but that didn’t feel “bite-sized” enough)! 
 
I made it until August. I had to cut out dairy and chocolate while I was nursing for a little while, and I decided there was no way I was going to live a life without dairy, chocolate, and french fries. So I gave them back to myself. No regrets there, folks.

My goal for this year…. yes. You guessed it. The age-old, ever present goal to lose weight. But as I said, I need to break big goals like that down into bite-sized pieces. 
 
So my actual goal is simply to track all of my food in iTrackBites (a Weight Watchers copycat app). Whether I go over points is irrelevant to the actual goal. I just have to track everything.
 
Day 3 and going strong y’all ;). 
 
If you know Weight Watchers at all, you know all fruit is fair game for no points, including bananas! I’ve tried many, many “plan friendly” banana bread recipes (in my 13+ years of an on-again-off-again relationship with WW), and this is by far the best one I’ve ever tried. It’s perfectly moist and soft without being too dense or gummy, which is a common problem when you’re baking low fat and low sugar. 
 
And best of all, it just tastes like really good homemade banana bread– NOT like diet food!

Skinny Chocolate Chip Peanut Butter Banana Bread

INGREDIENTS:

  • 3 mashed bananas
  • 1 egg & 1 egg white
  • 1 tbsp melted butter
  • 1 tbsp applesauce
  • 1 tbsp honey
  • 1 tbsp melted peanut butter
  • 1 tsp vanilla
  • 1 tsp baking powder + 1/2 tsp baking soda
  • 1/2 tsp salt + 1 tsp nutmeg
  • 1 1/2 cups all purpose flour
  • 3 tbsp chocolate chips (or PB & chocolate chips)

INSTRUCTIONS:

  1. Preheat the oven to 350ºF.
  2. Prepare a 9x5x3 loaf pan by spraying lightly with non-stick cooking spray and lining with parchment paper (or foil first, then spray).
  3. Mix together the mashed bananas, eggs, butter, and applesauce. Add in the honey, melted peanut butter, and vanilla.
  4. Fold in the flour, baking powder, baking soda, salt, and nutmeg.
  5. Mix in the chocolate chips.
  6. Pour into the prepared pan and bake for 40 minutes. Let cool before slicing.
