What is Baked Brie Spaghetti

Baked Brie Spaghetti is one of those novelty recipes that went viral on TikTok, partly because it’s so easy to make! Each individual portion of spaghetti is tossed with melty brie cheese, sun-dried tomatoes, roasted garlic, and basil.

How to Make Baked Brie Pasta

➊ Spread the sun-dried tomatoes, roasted garlic, basil, and a little bit of white wine over the brie.

➋ Cook the noodles as you normally would.

➌ Use tongs to swirl portions of noodles in the melty brie before serving.

Baked Brie Spaghetti Ingredients

Brie Cheese – the larger the wheel of brie cheese the better (more cheese > less cheese always). We tried this recipe using first Wegman’s Medium Entertaining Brie Cheese (which is extremely soft) and then Président Brie Cheese (which has a little more firmness).

They were both good, but we found that that using the Président Brie Cheese made it easier to coat individual servings of cheese, just because it stayed a little bit more firm when melted.

Wegman’s Medium Entertaining Brie Cheese turned into a big, delicious puddle of cheese. Which was fine, but we ended up just plopping all of the pasta into the brie to coat it all at once instead of individual portions, because the cheese had escaped the rind after it melted.

Sun-Dried Tomatoes – these have an almost sweet flavor and chewy texture. A little goes a long way!

Roasted Garlic – I bought pre-packaged roasted garlic from the store and found it was a little flavorless. If you roast your own garlic, it may be more flavorful. But in the end, I actually felt like this ingredient could be easily replaced by garlic powder. So if you don’t have any roasted or fresh garlic on hand, don’t even worry about it!

Basil – mmmmmmm, is there anything that fresh basil doesn’t make so much better?! Use it fresh, and use it generously!

Spaghetti –  I always prefer to use angel hair pasta in my spaghetti recipes, so that’s what I have pictured here. It worked perfectly, but you could absolutely use regular spaghetti or even fettuccine instead.

Crushed Red Pepper Flakes – just a pinch, a little goes a long way!

Do You Take the Rind Off Brie Before Baking?

Oh man, this question haunted me for so long! And ultimately, this is what I’ve decided the answer is… it just depends on the recipe. I know that’s annoyingly vague, so here’s a breakdown of the rationale behind that answer. 

Brie cheese baked inside of a pastry – Remove the top rind (optional to leave it on if you prefer).

Baked brie bites in pie crust or shell – Removed (optional to leave it on if you prefer).

Baked brie in a dish/pan – Leave it on or remove the top only.

Ingredients

  • 8-9 ounces brie cheese
  • 2 tablespoons sun-dried tomatoes, drained
  • 1 clove of whole roasted garlic, smashed*
  • 2 tablespoons dry white wine
  • pinch of red pepper flakes
  • 5-7 ounces long noodle pasta
  • fresh basil to taste
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400ºF.
  2. Slice the rind off the top of the brie. Place the cheese in an oven-safe dish.
  3. Spread the sun-dried tomatoes on top of the brie. Add the roasted garlic, red pepper flakes, dry white wine, salt, pepper, and basil.
  4. Bake for 18-20 minutes.
  5. Meanwhile, cook the pasta according to the directions on the package. Reserve 1/2 cup pasta water.
  6. Remove the brie from the oven. While still hot and melty, portion out the pasta and swirl each pasta in the brie mixture until the pasta is thoroughly coated.
  7. Use a tong to transfer the noodles to a bowl.
  8. If the cheese coating seems too thick, add a little pasta water to the bowl to thin it out a bit.
  9. Serve immediately.
