Make this creamy pumpkin protein pudding in just minutes! Full of fall flavor and high in protein, it's an easy, guilt-free treat you'll love.

Ingredients

  • 1 cup plain Greek yogurt
  • 1 cup milk
  • 1 small box instant vanilla pudding mix
  • 1/2 cup pumpkin puree
  • 1/2 tsp pumpkin pie spice

Instructions

  1. Mix the base: In a large bowl, whisk together the Greek yogurt, milk, pumpkin puree, and pumpkin pie spice until smooth.
  2. Add the pudding mix: Gradually whisk in the instant pudding mix until fully combined. The mixture will start to thicken as you whisk. If there are clumps of pudding mix that aren't breaking up very well, use an immersion blender or an electric hand mixer to blend until smooth.
  3. *Chill: Cover the bowl and refrigerate the pudding for about 30 minutes to allow it to set and thicken further.
  4. Serve: Once chilled, enjoy your pudding with optional toppings like whipped cream, nuts, or a sprinkle of cinnamon.

Notes

*You can eat this pudding immediately without further chilling. But as the pudding chills, it will thicken and the flavors will continue to develop.

1. Can I use protein powder?

We actually don't recommend using protein powder in this recipe. If you're looking to increase the amount of protein in the pudding, we suggest replacing the milk with a Fairlife or Premier Protein ready-made drink (which is NOT the same thing as mixing protein powder and water to form a shake). The use of protein powder in this recipe will compromise it's shelf life and the consistency of the pudding.

2. Can I make this recipe dairy-free?

Sure! Simply substitute the Greek yogurt with a plant-based alternative like almond or coconut yogurt, and use a dairy-free milk such as almond, coconut, or oat milk. There will be some variation in texture and flavor depending on the substitutions.

3. How long will the pumpkin protein pudding last in the fridge?

This pudding will keep for about 3-4 days in an airtight container in the fridge. It’s perfect for meal prepping snacks or desserts for the week.

5. How do I make the pudding thicker?

If you prefer a thicker pudding, you can either use less milk or add more pudding mix. You could also let the pudding sit in the fridge for a longer period to allow it to thicken further.

6. Can I freeze the pudding to make ice cream?

Yes! You can freeze the pudding mixture and use a Ninja Creami or other ice cream maker to create a creamy frozen treat. Just freeze the pudding for 24 hours and follow your machine’s instructions.

7. What toppings go well with pumpkin protein pudding?

Some great topping ideas include whipped cream, crushed Oreos, gingersnaps, chopped nuts, granola, or a drizzle of caramel sauce. You can get creative with your favorite flavors!

8. Is this recipe gluten-free?

If you use gluten-free pudding mix and ensure that all other ingredients (like toppings) are gluten-free, then yes, this recipe can be made gluten-free.

9. Can I make this recipe ahead of time?

Yes, this is a great make-ahead recipe! You can prepare the pudding and store it in the fridge for a few days. It’s a perfect option for easy, grab-and-go snacks or desserts.

10. How much protein is in each serving?

The protein content will depend on the type of yogurt and milk you use, as well as the serving size. On average, each serving contains around 10-15 grams of protein, making it a great post-workout snack or meal addition.
