I know it’s time for ice cream, and I promise I’ve got some of those recipes coming your way soon! But as of late, I’ve just been in the mood for salad.
 
Probably because I’m coming off a vacation week. And when my family vacations, we like to play hard and EAT hard. Seafood and ice cream and chocolate chip cookies and donuts and more donuts and more ice cream and pizza and burgers and did I mention more ice cream and donuts?? So yeah. My body is asking for salad today.

And there is SO MUCH I love about this salad!
 
Primarily because there’s more stuff than lettuce, know what I mean? Here’s the breakdown:
 
Hard Boiled Eggs
Chicken
Bacon
Cherry Tomatoes
Avocado
Cheese
Crispy Onion Strings
Crispy Tortilla Strips
 
So much stuff!!! And I actually meant to add chopped red onions, but I was so hungry it just slipped my mind. It’s a feat that I was able to get this photographed at all before I dove in headfirst! 
 
 
And I haven’t even told you about the best part yet– the dressing!
 
We’re making a quick and easy BBQ Ranch dressing that is absolutely sublime on top of this salad. I used yogurt ranch and sugar free BBQ sauce to make it a little lighter, and it still tasted amazing. But feel free to change that up if you want to.
 
 
That dressing may not be a very appeasing color, but I swear it’s delicious. You’ll be craving this salad all summer after just one bite, I promise you that!

BBQ Chicken Cobb Salad

INGREDIENTS

For the BBQ Ranch Dressing

  • 2 tbsp BBQ sauce
  • 2 Tbsp Ranch

Salad

  • 1 heart of Romaine, chopped
  • 3 strips of bacon, cooked and chopped
  • 1 hard boiled egg, sliced
  • 4 ounces cooked chicken breast, cubed (I used rotisserie)
  • 1/2 avocado, cubed
  • cherry tomatoes, halved (just grab several)
  • 1/8 cup shredded cheddar cheese
  • 2 tbsp crispy onion strips (found in the dressing aisle at Target)
  • 2 tbsp tortilla strips (found in the dressing aisle at Target)
  • salt & pepper to taste

INSTRUCTIONS

 

  1. Whisk together the BBQ sauce and the ranch dressing, and set aside.
  2. Toss together all remaining ingredients and serve with dressing drizzled on top.
