If you loved our BBQ Chicken Pizza, then this easy weeknight dinner is right up your alley! All you’ll need are a few simple ingredients and about 30 minutes to prepare this shortcut version of our favorite pizza.
Biscuit dough serves as the “crust” portion of this dish. But you don’t have to roll it out or let it rise or lug out your big, round pizza pan that you shoved in the back of the cupboard because it doesn’t really actually fit anywhere (just me?).
The biscuit dough is cut into small pieces and layered evenly in the baking dish with the chicken, BBQ sauce, and cheese. As it bakes, it “bubbles” up into puffy, golden pieces of delicious “crust.”
You could saute onions or bacon and add them to the mix as well, but I was in a rush when I whipped this up. So just the basics for us! But you could really mix and match the ingredients in this dish to your heart’s content.
I hope you enjoy this as much as my daughter did. I believe her exact words were, “Mom, you should make this over and over and over again!”

Ingredients
- 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
- 1 can (16.3 oz) refrigerated biscuits
- 1 bottle (18 oz) barbecue sauce
- 2 cups shredded mozzarella cheese (8 oz)
- garlic powder
- Italian seasoning
Instructions
- Preheat the oven to 350ºF. Brown the chicken in a large skillet. Season with salt and pepper as desired. Set aside to cool slightly.
- Cut each piece of biscuit dough into 8 pieces.
- Add the chicken, biscuit dough, and BBQ sauce to a bowl. Gently mix to coat.
- Layer the mixture in a greased 9×13 baking dish. Top with the cheese. Lightly sprinkle garlic powder and Italian seasoning over the cheese.
- Bake for 25-30 minutes, until the middle pieces no longer feel dough-y.
