Imagine a thick, buttery, flaky homemade pie crust (side note: I finally found an easy all-butter crust recipe that even I can’t mess up!) filled with a sweet, nutty butterscotch filling that hits every cozy fall craving. It’s gooey, golden, and is absolute perfection with a scoop of vanilla ice cream on top.

This recipe is a twist on our family-favorite Chocolate Chocolate Chip Pecan Pie! We’ll be sharing that one soon– it’s seriously so good with melted chocolate chips stirred right into the filling and even more sprinkled on top with the pecans.

This butterscotch version? The same dreamy, gooey texture — but with butterscotch chips instead of chocolate.

Tips for Success

  • Melt the butterscotch chips low and slow so they don’t seize up.
  • Tent with foil halfway through if your crust starts browning too fast.
  • Let the pie cool fully — it sets as it cools!
  • Add a pinch of salt if you like a sweet-salty balance.
