What Happens if You Don’t Chill Sugar Cookie Dough?
Most sugar cookie recipes require chill time. This is because the recipe usually begins with softened butter. And before you put dough made with soft butter in the oven, it needs to chill which allows the butter to harden again. When the butter is cold at the beginning of the baking process, the dough will retain it’s cut-out shape.
Our recipe begins with cold butter. Which is why chill time isn’t necessary before baking– as long as you work quickly. The shorter the time between removing the butter from the fridge and placing the dough in the oven, the better the dough will hold its shape during baking.

What is the Fastest Way to Chill Cookie Dough?
Like it says in the title, this easy sugar cookie recipe requires no chilling at all once the dough comes together– it’s the perfect sugar cookie! The cookies will retain their shape. However, I like to stick my cookie dough (after they’ve been cut out and placed on a prepared baking sheet) in the freezer for 5 minutes before baking. In my mind, it helps to keep the edges sharp.
This is also a good idea if your butter wasn’t straight-from-the-fridge cold when you put it in the stand mixer. Or if the dough sat out on the counter longer than you planned after mixing. It’s always a good idea to err on the side of too-cold rather than too-warm when it comes to making sugar cookies.
How to Make Easy No Chill Sugar Cookies
No Chill Sugar Cookie Recipe
No chill time required with this easy and delicious no-chill sugar cookie recipe.
Ingredients
- 2 sticks (salted) butter, cold
- 1 c sugar
- 1 egg
- 2 tsp vanilla extract
- 3 cups all-purpose flour
- 2 tsp baking powder
- Icing
- 3 cups powdered sugar
- 3-5 tablespoons milk
- 2 tbsp corn syrup
- 1/2 tsp vanilla
- optional: gel food coloring
Instructions
- Preheat oven to 350ºF.
- Using an electric mixer, beat together the butter and the sugar until smooth.
- Mix in the egg and vanilla. Mix in the flour and baking powder until dough forms. Use your hands to form the dough into a disc.
- On a floured surface, roll out the dough to about 1/4 inch thick and cut into shapes. Place on ungreased baking sheet and put in the freezer* for 5 minutes before baking.
- Bake for 7-10 minutes (the bottoms should be brown, and the tops should look dry but not browned at all). Let cool completely before icing.
Icing
- Whisk together the powdered sugar, 3 tablespoons of milk, corn syrup, and vanilla. Add additional milk 1 tablespoon at a time until the icing consistency is slightly thicker than honey.
- Transfer icing to a piping bag or icing bottle to decorate the cookies. Let the icing dry overnight before packaging or storing.
Notes
*This step is totally optional. But I feel like it makes the edges just a little bit sharper during baking. However, you can make this recipe 100% no-chill and still achieve a great shape that won't spread!
