As I mentioned previously in my butternut squash pie post , I unfortunately never appreciated the pumpkin pie until later in life. Now, however, I am easily making up for all that lost time without pumpkin pie.

I love its simplicity in making, and simplicity in taste. Their is nothing too exotic or overpowering about a good ol’ pumpkin pie. A pinch of cinnamon here, a pinch of ginger there along with the pumpkin and that’s it. And IT is amazing.

Enjoy this pie! And of course, enjoy it with lots and lots of whip cream. That is the only thing that could make this pie better!

Easy Pumpkin Pie

Ingredients: 8 – 9 inch Pie Filling

  • 1 egg
  • 1 1/4 cup pumpkin puree or cooked pumpkin
  • 1 1/4 cup evaporated milk
  • 2/3 cup of sugar
  • 3/4 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp ground cloves

Ingredients: Pie Crust

Directions:

  • Preheat oven to 350° F
  • Place egg in mixing bowl and beat slightly
  • Add all other filling ingredients to mixing bowl and mix well
  • Place mixture into pie crust and bake for 35 – 45 minutes (until knife comes out clean)
