Double Chocolate Chip CookiesA couple of weeks back I posted these healthy chocolate chip chickpea cookies They have become such a hit in our household that we have started making various versions of these cookies. My first thought when I knew I wanted to make more of these was, “what can make these better?”, and I immediately thought, more chocolate of course! All I did was add a little cocoa powder to the chocolate chip recipe and voila, we had double chocolate chip chickpea cookies.

These cookies really are incredibly easy to make, and it is so refreshing to eat a delicious cookie that does not mostly consist of flour, sugar, and butter. These cookies satisfy the sweet tooth we all get without any flour, sugar, and butter.

If you are looking for a way to appease your kids’ sweet teeth without pumping them full of sugar, high fructose corn syrup, etc., this is a great compromise. We have really fallen in love with these cookies in our household due to these cookies’ easiness and health benefits as compared to your traditional cookie. Hope you enjoy as much as have!

Double Chocolate Chip Chickpea Cookies

ingredients:

  • 1 can chickpeas (15.5 oz)
  • 3 tsp vanilla extract
  • 1 cup nut butter (no sugar added preferable)
  • 1/3 cup honey
  • 1 tsp baking powder
  • 1/3 cup cocoa powder
  • 1/2 cup chocolate chips

instructions

  1. Preheat oven to 375ºF 
  2. Drain chickpeas and place on paper towel and dry out by rolling over chickpeas with another paper towel
  3. Place all ingredients into food processor (with exception of chocolate chips) and blend until combined well and dough comes together
  4. Place chocolate chips in dough and roll into dough by hand
  5. Roll out 12 balls of dough and flatten into cookie shape
  6. Place on greased baking sheet and bake for 12 minutes and when timer goes off, turn off oven,  crack open oven door, and let sit in cooling oven for 20 minutes
  7. Serve and enjoy!
